Pink Bourbon is extremely rare in Mexico and Enrique Lopez at Finca Chelin is probably the highest regarded processor of coffee in Mexico. This lot is a black honey that tastes incredible and there is only 1 bag of it (69kg) in the world.
Enrique’s farm, Finca Chelín, is renowned for his high quality lots. Enrique is highly influential in Oaxaca, and delivers educational training, talks, and access to buyers for other producers in the region.
Enrique’s focus is creating a name for Oaxaca coffees, that are incredibly high quality, and delicious.
Cherries are picked very ripe (dark red – purple, ideally around 26°Brix), after floaters are removed, clean cherries rest in concrete tanks for 2 nights and are then de-pulped in the morning (roughly 40 hours of rest). They are de-pulped and put to dry just as the other honeys at Chelín (first 2 days under direct sun to enhance tartaric acidity and complex fruity profile, then under shade). In comparison to the Red Honey which undergoes less time resting in cherry, the Black Honey tends to have more notes of ripe fruits, figs, dark berries and an enhanced malic acidity.
