Flores Wolo Wio Anoxic Natural
After working on our Winter Coffee at the end of 2024, I really wanted to have a crack at a Summer Coffee. The idea of a limited run of a seasonally inspired blend has always interested me. They are one of few ways we as a roastery can get a little creative and foster a coffee’s flavour aside from roasting.
Like all of my blends, our Summer Coffee started with a clear concept in mind and an idea of the notes I was after. I always allow some wiggle room for the notes as I am ultimately dealing with a natural product that will feature some flavours that do not necessarily fit my brief. If I wanted to bypass this, I would have just sourced a co-ferment and called it a day, but where’s the fun in that?
I wanted a sweet and vibrant coffee, focused on summer fruits like cherries and berries. This meant selecting our Colombia Pink Bourbon to feature as the foundation of the blend. It’s a delicious washed coffee with a prominent strawberry note, making it a perfect base for my object.
Once I’d found the right coffee to get the ball rolling, I wanted to amplify the fruit notes and add some depth to the flavour. This meant looking towards a natural coffee as they often present a rich, fruit flavour and even in small doses, their effects can be understood. Luckily, we already had a great candidate in our range: Our Indonesia Anoxic Natural features a rich strawberry note that synergises with our pink bourbon, fleshing out the strawberry flavour, and bringing with it facets of cherry and watermelon.
I am very pleased with our Summer Coffee and will be unashamedly enjoying it all summer long.

- 50g bloom, + 50g water every 30 seconds.
ESPRESSO (BLACK)
- 17g in
- 50g out
- 15/20 seconds
- Slightly coarser than normal. Juicy sweet, bright
ESPRESSO (WITH MILK)
- 18g in
- 36g out
- 30 seconds.
- A more traditional recipe to compete with the milk.

I’ve been using this as a cold brew coffee, it’s excellent the fruit flavours and natural sweetness really come through. I’ve also brewed it as an espresso and it came out really sweet and fruity again. I’ve already bought more!
