Puncak Sirna Anaerobic Honey is sourced from 250 small farms located in the Cianjur district of Bandung, West Java (Puncak Sirna is an area within this district).
The coffee is processed at the Sadayana Washing Station, which was built in 2022. The washing station provides important services such as compost and seedling programs, and micro-financing for collectors, supporting 191 farmers.
The coffee cherries are selectively sorted in tanks before processing. This lot is processed using honey anoxic fermentation in barrels, with a one-way valve for 120 hours. After fermentation, the coffee is dried on raised beds for 2-3 days and then on patios for 4-12 days, depending on the weather conditions.
