Misalea’s farm is located both in an area with excellent soil quality and the perfect altitude for growing these varietals. However, complication occurs during fermentation and drying as a result of cold evening temperatures and and overcast weather. It takes great skill and experience to ensure that the post-picking production runs smoothly and the outcome is consistent. The slower processing creates an interesting and unique flavour profile that’s become synonymous with Misaela’s farm.


Thanks to dry, hot winds that blow from Mexico’s Tehuantepec plain, the Highland
Huehuetenango region is protected from frost, which allows for cultivation at extreme altitudes
of beans with a fine intense acidity, full body and delightful wine notes
