Misalea’s farm is located both in an area with excellent soil quality and the perfect altitude for growing these varietals. However, complication occurs during fermentation and drying as a result of cold evening temperatures and and overcast weather. It takes great skill and experience to ensure that the post-picking production runs smoothly and the outcome is consistent. The slower processing creates an interesting and unique flavour profile that’s become synonymous with Misaela’s farm.
