Process: Washed and Anaerobic fermentation
The cherries are handpicked and selected by the farm workers at The Cottage, they are then examined and checked for any defaults and sorted accordingly. Once the quality checked cherries have made it through they are placed in large industrial water bins for their first fermentation. This process takes around 18-36 hours.
Once this step has been completed they are taken to be de-pulped in order for the anaerobic fermentation to take place. This is another 40-60 hours. When this is over, the mucilage is washed away and for around 15-20 days the beans are placed on large patios to dry before being bagged up and sent to the purchase warehouse.
