Recently, Evie from Que Onda, went to stay on the farm with Elfiga Martinez Flores. Here are some excerpts from her field notes:
- Corn is deeply ingrained in Mexican culture, available in a multitude of colours and used in a wide array of dishes.
- With the help of traditional tools, women skilfully transform corn into tortillas, tacos, tamales, tostadas, tlayudas and other culinary staples.
- Tortillas are a constant presence on the table, and corn is central to daily life.
- During my stay at Elfiga’s home, each day began with grinding the corn that had been cooked the previous night — corn is integral to the daily rhythm, marking both the start and end of each day.
- Elfiga, a single mother, works tirelessly to ensure that her son, Miguel Ángel, sees a future in coffee farming.
- Miguel Ángel is actively involved in coffee production, assisting both his Mother and Grandfather.
