After the huge success of our Winter Coffee, he’s turned his attention to the warmer months with something new: Summer Coffee – a bright, fruit-forward blend inspired by sunshine and fresh berries.

The Inspiration Behind Summer Coffee
“After crafting our Winter Coffee in late 2024, I knew I wanted to take on a Summer blend. These seasonal releases let us get creative and explore flavour in a unique way, beyond just the roast.” – Will, Head of QC and Sensory
Blending seasonal coffee is a bit like perfume-making or cooking. There are principles you follow until you truly understand why they work. Just as certain herbs and spices pair with specific meats, coffee blending relies on understanding natural flavour profiles and how they complement one another.
Crafting the Perfect Summer Cup
Every blend starts with a concept. For Summer Coffee, Will had one clear goal:
Create a sweet, vibrant coffee with notes of summer fruits like cherries and berries.
Step 1: Choosing the Foundation
We began with our Colombia Pink Bourbon – a washed coffee known for its strawberry-forward flavour. It’s clean, sweet, and bursting with fruit – the perfect base.
Step 2: Adding Fruit & Depth
To build on the strawberry and add complexity, Will turned to a natural process coffee. Natural coffees bring richer, more intense fruit notes, even in small amounts.
Enter the Indonesia Anoxic Natural. With its deep strawberry, cherry, and watermelon flavours, it paired beautifully with the Pink Bourbon. The result? A cup with layered fruit notes and a syrupy sweetness that feels like summer in a mug.
🍉 Watermelon notes come from the honeydew-like character in the Indonesia Natural, amplified by the strawberry.
🍒 Cherry notes are created by the synergy of strawberry with red wine-like, fermented undertones.
Though coffee blending doesn’t offer as much flexibility as perfume-making, Will uses the same creative process – carefully balancing elements to evoke feeling, place, and season.
